The red, clayey soil around Atotonilco el Alto provides ideal conditions for growing the blue agave (Agave tequilana). The juice is gently extracted by traditionally crushing the boiled agaves in a stone mill. Together with the fibers, the juice is then stored in wooden barrels for fermentation until the must can be distilled. 30 City tour of Atotonilco el Alto Duration: 01:30 h · Level: Easy Atotonilco El Alto, founded in 1551, is a true gem in the West of the federal state of Jalisco. Atotonilco means “place of hot waters” in Náhuatl, and the hot springs in the crystal clear Río Taretan are still an excellent place for a swim. In the colonial center, you find the “Templo San Miguel Arcángel”, a rather plain, but very beautiful church with impressive paintings on its ceiling and old stained-glass windows.
