It is a characteristic produce of Yucatán. You visit a habanero plantation near the small village of Kinchil where small holders have since 2007 cultivated the habanero plants in an organic farming project. The dry, hot climate combined with the stony ground offers perfect conditions for a good harvest. The habanero pepper, a member of the genus Capsicum, is extremely hot (its Scoville score reaches up to 580,000 units). It is a “must” for the Mexican cuisine and certainly an interesting enrichment of taste if added sparingly.
